Paleo Oven-Roasted Chicken

This is a super duper easy recipe that you could practically do in your sleep! Make sure you make enough for leftovers, so if you are cooking for two people then I would suggest doubling the recipe so you both have enough for lunch the next day.

PRE-HEAT OVEN: 425 F degreesimage

PREP TIME: 10 min

COOK TIME: 40-45 min, or until the internal temperature of the chicken reaches 165 degrees.

 

INGREDIENTS:

  • 1 tbsp Ghee or Coconut Oil
  • 6 Organic Boneless Chicken Thighs
  • 2 Green Bell-pepper
  • 2 Yellow Squash
  • 1 tbsp minced garlic
  • 1 tbsp extra virgin olive oil
  • Spices: Salt, Pepper, Garlic, Paprika

 

DIRECTIONS:

  • In an oven safe cast iron or stainless steel skillet, place the ghee or coconut oil, and place the dish over the stove.
  • Turn the stove to medium heat, and let melt. Greece the pan with the melted oil or ghee. image_1
  • Add minced garlic throughout entire dish.
  • Turn off the heat.
  • Chop bell-pepper, squash and onion
  • Place in the perimeter of dish.
  • Place chicken on roasting dish.
  • Sprinkle seasonings.
  • Drizzle olive oil over the veggies.
  • Cook, and enjoy!
